Pizza WITHOUT The Carbs?

well, sort of. Eating on the road with limited space, food and appliances, in this smaller than small Tiny Home of a BIG RIG, takes some creativity when it comes to home cooking. In wanting to make an omelette, I made what looks like a dough-less pizza. I used Trader Joe’s vegetable medley, eggs, minced garlic, and some mozzarell-ahh cheese. I cooked veggies halfway in NuWave oven, melted butter over, then added whipped egg and garlic. Cooked for 8 minutes then added cheese and warmed the tortillas for 3 more minutes and VOILA… Frittat-ahh!

Served over cut up arugula, with a side of tort and some sprinkled on turmeric/African bird pepperfrittata over arugula blend! DIVINE!

And although not all packaging is labeled organic, Trader Joe’s, I’ve been told by more than one store does not sell anything GMO. It was M’m M’m good breakfast pizza without the carbs!

**a typical high WHITE carb meal always gives me a sweet tooth. This, although not high in carbs, makes me wanna eat chocolate. Why? As a vegetarian, eggs gotta be brown, organic and spruced up with additional flavors. Otherwise, fowl/foul breathe follows. But… It’s nothing tooth brushing or a nib of dark chocolate can’t fix! Thus, some afternoon dessert! Only thing missing was the almonds.
