NuWave Oven Meets Over-The-Road Driver…

aside from being happy to begin regular blogging again… this is the first over-the-road (as a Holistic Nutritionist passenger of a truck driver) meal in my handy dandy new toy… the NuWave Oven.

NuWave Meal #1 Today’s meal was a spinach lined plate topped w/ grilled sweet potatoes, onion and Punjab vegetables. Seasoned w/ a cayenne/turmeric blend, **Himalayan salt, nutritional yeast and a dollop of sour cream.

A rather delicious nutritious meal in less than 15 minutes. Only malfunction was the new Himalayan salt grinder decided to open and pour the rocks on, instead of grinding them. YUCK–First few bites darn near turned me into a burro/donkey! However, after careful sorting thru (and spitting out of rocks)… I’m oh so thankful for the hot homemade rainy day meal.

With limited fridge space and no running water source, it was a paper plate and part packagedpunjab meal. A first in using paper plates (outside of a potluck and my last few weeks in the cold wet and/or rainy woods). But overall, it sure beats the typical trucker FrankenFood fare and all the flashy landfilling money-wasting packaging that goes with it.

For now the meals will continue to get healthier as I bring practice to perfection in making desserts and snacks. Life is so very M’mmm M’mmm good!
